Instructions:

For the tomato carpaccio, wash the tomatoes and cut them into thin slices. Spread these on the plate. Grill cheese on both sides until desired brownness – alternatively, fry in a pan with olive oil.

Meanwhile, thinly slice garlic and spread on top of tomatoes. Wash, dry, pluck and chop the parsley.

Arrange the cheese on the tomatoes, sprinkle with parsley and pour sparingly with high quality olive oil, season with salt and pepper.
