Mix well oil and vinegar for the dressing, season with salt and black pepper from the mill. Cook cauliflower and broccoli in salted water until al dente and rinse. Drain and marinate with the dressing. Prepare crab according to the basic recipe and marinate while still lukewarm, also with the dressing. Marinate the lettuce and arrange on plates. Place crayfish and vegetables on top and decorate with tarragon leaves.
