Vegetable Soup without Soup Cubes

For the vegetable soup, first clean and dice the onions. In this recipe you also need all the peels and sections, so wash the vegetables very well.

Put the onion skins in a bowl. Clean the rest of the vegetables (celery, leeks, carrots, yellow beets) and add all the peels and sections to the bowl with the onion peels as well. Cut the cleaned vegetables into small cubes.

In a small bowl add some water and the salt. Slowly fry the onion cubes in oil in a large pot until light brown, then add the peppercorns and coriander seeds and fry briefly until fragrant.

Now pour about 3 liters of water into the pot, add all the peels and sections, as well as the soup powder, Maggi herb, bay leaves, chili pepper and tomatoes.

Simmer on low heat for about 2 hours and reduce by about half. Then pour the soup through a sieve into a clean pot and squeeze out the leftover vegetables firmly.

Add the vegetables to the soup with the salted water, cook for another 10 minutes or so until the vegetable cubes are crunchy but cooked and season with salt and pepper.
