Instructions:

For Herti’s fruit slices, first beat eggs with sugar and vanilla sugar until foamy, then sift in flour and fold in. Preheat oven to approx. 220 °C, spread sponge on a baking tray lined with baking paper and bake for approx. 10 minutes. In the meantime, line a loin pan with plastic wrap, measure out the finished, still warm sponge cake to the required size using the loin pan and then line the pan with the sponge cake strip. Cut remaining sponge cake into 2 equal strips and use as a lid.

Mix Qimiq until smooth, add powdered sugar and vanilla sugar, fold in whipped cream. Allow the mixture to set a little. Cut strawberries into quarters or eighths, depending on size, and marinate with orange liqueur. Spread two-thirds of the filling in the sponge cake pan and spread the strawberries on top. Spread remaining third on top of strawberries.

Cover with the 1st sponge cake strip, top with strawberry jam and then the 2nd sponge cake strip. Leave to set in the refrigerator.

In the meantime, prepare the chocolate glaze. Cut the chocolate into small pieces and heat with the whipped cream until a homogeneous chocolate glaze is formed. Remove the fruit slices from the refrigerator, turn them out onto a glazing grid, spread with finely strained strawberry jam and cover the Hertis fruit slices with the chocolate glaze.
