Medallions are cut like tournedos from lung roast, but thinner (one slice 60-80 g), like to give cut into triangular, smeared with oil and roasted on the broiler.

One calculates per unit 3 pieces.

Serve topped with maitre butter. Sauce is served separately.

It is not usually served with ganache.
