Instructions:

Mix the minced beef with galangal, lime juice, fish sauce and shallots.

Heat a heavy skillet and saute the mince over medium-high heat until cooked through, about 4 minutes.

Remove skillet from heat. Add minced scallions, cilantro leaves and ground glutinous rice and mix everything together thoroughly.

Arrange the mince on a serving platter and season with ground chilies to taste. Garnish with mint leaves.

In which to wrap the minced meat salad to eat.

For the ground beef, chop roast beef by hand. Buffet-worthy, nice summer meal.
