For Christmas roast beef, first trim the roast beef slices if necessary, dry them and season with salt and sugar. Sear on both sides in a hot pan in a little oil. Place on a baking tray or in a roasting pan in the oven preheated to 80 °C top/bottom heat for about 20 minutes, until the core temperature at the thickest part reaches 58 °C.

In the meantime, peel and finely chop the shallots. Let the sugar caramelize in the pan used before. Deglaze with sherry and pour in vegetable soup. Add shallots, cinnamon, thyme and vanilla. Reduce to a thick sauce. Then remove cinnamon, thyme and vanilla bean.

Place the meat, including the meat juices, in the sauce and serve the Christmas roast beef immediately.
