For the crostata, first prepare the filling. Remove the seeds from the plums and steam them with the sugar and lemon juice on a low flame for about 30 minutes, covered.

Mix the cornflour with the juice of half a lemon and a little water and stir into the hot fruit puree. Season to taste with cinnamon.

Prepare a short pastry with flour, salt, butter, sugar and the egg. Roll out three quarters of the dough and line a greased and floured springform pan with it, raising the edge.

Spread the plum filling on top, roll out the remaining dough, cut into strips and cover the cake with them in a grid pattern. Bake at about 170° C for 45 minutes. Sprinkle the crostata with powdered sugar while it is still warm.
