Instructions:

For the saddle of venison, mix butter, sugar and softened chocolate. Stir in yolks. Beat egg whites with granulated sugar until stiff.

Mix almonds, sponge cake crumbs and snow with yolks. Bake in greased, floured loin pan over medium heat.

Then glaze with chocolate icing and spike with slivered almonds.
