A delicious mushroom dish for any occasion!

Brown the long grain rice in the butter and extinguish with water. Add salt, bring to a boil once and cook the long grain rice with the lid closed with low heat for 15 to 20 minutes.

Remove the peel from the onion and cut it into thin slices. Clean mushrooms and cut into slices. Peel and grate the ginger. Peel half of the lime and half of the orange with a zester. Then squeeze.

Lay out the veal cutlets, sprinkle with herbs de Provence, salt and pepper. Place a piece of goat cheese on each end of a cutlet and roll up.

Heat clarified butter in a frying pan and fry the involtini, reduce heat a little and add the onions, mushrooms and ginger. Add the honey, caramelize a little bit and extinguish with orange-lime juice. Season with salt and pepper and garnish with orange and lime peel. Serve hot with the long grain rice.
