Instructions:

Shrimp skewers: Thread two king prawns on each skewer. Heat the olive oil in a frying pan and fry the king prawns well on both sides. Add the diced shallots and garlic and fry briefly, glaze with Sweet Chili Sauce. Fill up with soy sauce, add the parsley, toss briefly, remove from heat and marinate the king prawns in the liquid.

Mango dip: Remove the peel from the mango and dice the flesh. Blend finely with the vinegar, orange juice and juice of one lemon using a hand blender. Season with sugar, salt and chili from a spice grinder. Arrange the dip in dessert bowls and place the skewers inside.
