Preparation (circa 45 min):

Saute onions until translucent*, add brown sugar and lightly caramelize. Add diced peppers and spring onions, sauté and extinguish with vinegar.

Add chili, finely chopped nectarines, finely chopped ginger, season with red curry and a little salt.

Rub the melanzane well with a paper towel, cut it into longitudinal slices about one centimeter thick, grill on both sides with a little bit of olive oil on a hot grill pan and season a little bit. Simmer the tomato juice slightly and mix in the ajvar.

Roast pork loin steak in hot olive oil on both sides to the point, season with salt and pepper. Arrange the melanzan slices on the plate, cover with ajvar sauce, place the back steak on top, cover with fruit chutney and garnish with lavender bunches.
