Instructions:

For the minestrone, peel and dice the onion. Peel and press the garlic. Peel the potatoes and cut into cubes of about 1 cm. Peel the carrots and cut into thin slices.

Cut stalks from tomatoes and place in boiling water for about 10 seconds, rinse in cold water and skin. Cook croissants in salted water until al dente.

Heat olive oil in a non-stick pot, sauté onion and garlic. Add vegetable soup and season with oregano, basil, nutmeg and bay leaves.

Add potatoes and carrots and simmer gently, covered, for 7 minutes. Add tomatoes and continue to simmer for 8 minutes. Add peas and simmer gently for another 3 minutes.

Finally, mix in the pasta and season with salt and pepper.
