Cut the melanzani in half and place cut side up on a baking sheet lined with parchment paper. Make a long cut on the top side. Bake in the preheated oven at 180 °C for about 40 minutes. Remove and let cool slightly. Scrape out the flesh with a spoon and – if necessary – still chop. Mix with chopped garlic, lemon juice and olive oil. Season with sea salt and chopped thyme. Pour into decorative glass or dip bowls and serve.
