For the spelt cheese cookies, knead butter, spelt flour, salt, cheese and whipped cream into a smooth dough.
Form the dough on a floured surface into a roll of about 3 cm ø and let it rest covered in the icebox for about 1 hour.
Then cut the roll into thick slices and place on a greased baking sheet.
Mix the egg yolk and water and coat the rolls with it. Sprinkle with sesame seeds, caraway seeds or poppy seeds.
Bake the spelt cheese cookies in a preheated oven at 180 °C for about 18 minutes.
