Peel oranges like apples, completely removing the white skin. Cut oranges into narrow slices, perhaps removing the seeds. Rinse fennel, clean and slice lengthwise with stem into very narrow slices. Season fennel slices with salt and pull for 1S min. Thinly grate lime peel, squeeze lime juice. Cut the white and light green of the spring onions into narrow rings.

Pluck parsley.

Stir 3 tbsp lime juice and lime zest with pepper, olive oil, salt, pink pepper berries and 1 pinch sugar. Place scallions and parsley in a suitable bowl with fennel and orange slices. Drizzle lime sauce over top, let sit for about 10 min. Arrange leaf salad on plates. Serve with baguette.
