For the beef prosciutto with melon, remove the seeds from the halved melon with a spoon, form balls from the flesh with a baller (or cut into cubes). Cut the young onion into fine rings, olives into small pieces. Mix the lemon juice with the lemon peel cut into thin strips and salt and pepper. Stir in the olive oil. Mix the melon balls, onion rings and olive pieces into the lemon sauce. Arrange beef prosciutto on plates. Place Vogerl and frisée lettuce in the center. Arrange marinated melon balls, olive pieces and onion rings over ham and use remaining lemon sauce to marinate lettuce leaves.
