For the Matjes apple rolls, first wash the apples, remove the core and cut the apples into even slices (about 1-1 1/2 cm thick). Sprinkle with lemon juice.

Drain the matjes fillets and pat them a little dry. Wrap one matjes fillet around each apple slice. If necessary, fix with a toothpick.

Serve the matjes-apple rolls garnished with dill.
