For the sponge cake, separate the eggs, beat the yolks with the sugar and vanilla sugar until foamy, then beat the egg whites until stiff. Mix flour with baking powder and fold into the yolk mixture alternately with the beaten egg whites.

Line a baking tray with baking paper and spread the mixture evenly on the tray. Bake at 180 °C for approx. 12 minutes.

Then immediately turn out onto a tea towel, spread with jam and roll up. Sprinkle with powdered sugar.
