Wash the lemon hot, take the zests and squeeze the juice.

Wash, clean, peel and core the medlars. Also remove the membranes under the seeds.

Immediately sprinkle the pulp with lemon juice to prevent it from turning brown.

Mix the fruit mixture with the preserving sugar in a large saucepan, cover and let sit for about 3 hours.

For the orange sugar, take the zest from the orange and blend together with the sugar in a blender.

Puree the fruit mixture with a blender and bring to a boil. Boil for 4 minutes until bubbling. Add the lemon zest and orange sugar and boil for another 2 minutes.

Immediately pour the medlar jam into prepared jars and seal tightly.
