For the pile, cut brioche into 5 mm thick slices. Mix eggs, milk, sugar, vanilla sugar, raisins, almonds, lemon zest, lemon juice, cinnamon well.
Moisten brioche well with it. Grease a baking dish and place slices to cover bottom. Finely grate apple and spread on top. Repeat until all ingredients are used.
Last layer is brioche mixture. Bake at 180 °C top/bottom heat for approx. 30 minutes.
For the snow topping, beat egg whites with granulated sugar until stiff. Spread the snow on the pile. Bake at 230 °C top/bottom heat for 10 minutes.
