Instructions:

Paper veal kidneys down to a thin layer of fat, cut in half, remove branched vessels and finely shred.

Fry in hot fat, season and remove from frying pan.

Chop onion finely and fry in the frying residue, dust with flour, deglaze with vinegar and pour in soup.

Briefly boil away, add the kidneys again, let them soak in the sauce and bring to the table.
