Instructions:

1. put the flour in a suitable bowl. Add about 70 ml of water, stirring with a food processor (dough hook). Carefully continue adding water. If the flour starts to clump together, slow down the addition of water. Stop adding water as soon as a ball of dough has formed. Then knead the dough with the machine for about 1 min more. The dough is ready when it is smooth and shiny and feels soft and elastic. Take it out with your hands and put it in a suitable bowl, cover it and leave it in a warm place for at least 1/2 hour.

Knead the dough again, form it into a roll and cut it into 6 equal parts. Form 6 balls, dust them lightly with flour and place them repeatedly into the baking dish.

Heat the (preferably cast-iron) skillet over medium heat.

Flatten dough balls and dust with flour on both sides, tapping off excess flour.

5. carefully place dough balls in hot skillet and bake until brown spots appear on bottom. Turn over and bake the other side in the same way. If the heat is right, the first side will take 20-30 sec, the second side 10 sec. Remove the bread patties and brush with ghee or clarified butter to taste. Place in a cooking pot lined with a kitchen towel and cover. Do the same with the remaining dough. Stack the finished patties on top of each other in the cooking pot (the freshly baked patties form steam off, the kitchen towel sau
