For the spelt vegetable soup, melt butter in a saucepan. Stir in the spelt flour and sweat, then deglaze with water. Add the washed and chopped vegetables and cook gently for about 10 minutes on a very low heat.

Remove from heat and add the dissolved soup seasoning, the fement cereal and nutmeg. Stir thoroughly and refine with whipped cream. Sprinkle with freshly chopped herbs and serve the spelt-vegetable soup hot.
