Strawberries with Champagne Foam Sauce

Clean the strawberries, halve or quarter larger fruits. Sprinkle strawberries with sugar and pour 100 (150) ml of sparkling wine.

Marinate for about 30 minutes, then put them in a sieve and collect the sparkling wine.

Prepare an ice-cold water bath. Separate two eggs. Whip the egg whites until very stiff. In a saucepan, whisk yolks with remaining egg, powdered sugar and cornstarch until creamy. Gradually add sparkling wine and heat to boiling point at medium heat, whisking continuously. Puff once and place in egg bath. Fold in the snow and serve the mousse on the spot with the strawberries. Sprinkle with chopped walnuts, if desired.

Tip: It is best to use the strawberries fresh, right after purchase!
