Instructions:

For the millet strawberry cream, stir millet into boiling apple juice. Bring to a boil once, cover and simmer gently for 10 minutes on turned down stove top.

Then continue to swell on turned off stove top for another 20 minutes and then cool. Rinse strawberries, clean and cut into small corners. Mix mascarpone and yogurt until smooth.

Season cooled millet cream with acacia honey, lemon zest and vanilla bean powder, add strawberry corners and gently fold in mascarpone-yogurt mixture.

Garnish with mint leaves and chopped nuts.
