Instructions:

For burger buns made from spelt flour, first mix dry ferment with milk, sugar, oil and some of the flour and let rise for 5-10 minutes in a warm place, with a moistened cloth over it.

Then knead with the rest of the flour, salt and the egg (setting aside some of the egg white to coat) until a smooth dough is formed. Let rise again for at least 1/2 hour.

Knead the dough well one more time, form into a roll and cut into 6 equal parts. Turn each part loosely between the hollow of your hand and work surface until the dough has formed a smooth surface.

Place on a baking sheet lined with parchment paper (not too close together) and let rest again, covered, for about 15 minutes. Brush the spelt flour burger buns with the remaining egg white and sprinkle with sesame seeds.

Bake the spelt flour burger buns in a preheated oven at 220 °C for approx. 10-15 minutes.
