For the Thai Chili Beef with Melanzani, first cut the flank steak into rough cubes (2 x 2 cm). Mix the remaining ingredients to a marinade and soak the meat in it for at least 2 hours (better up to 5 hours).

Cut the melanzani in half lengthwise, cut the flesh crosswise, drizzle with peanut oil and sprinkle with sea salt. Braise in preheated oven at 170 °C for about 40 minutes.

Scrape the flesh out of the shell with a spoon (do not damage the shell and save 4 shells), chop finely and sauté again in a pan or wok. Season with sea salt and pepper and stir in the greens from the young onion. Pour mixture back into the melanzana shells and smooth out.

Sear the steak cubes all around in a wok, add tomatoes and salt lightly. Add remaining marinade and let it boil down a bit. Warm the melanzane halves in the oven and put them on a plate. Arrange the meat cubes and tomatoes on top and sprinkle the Thai Chili Beef with Melanzani with cress and chili.
