For the pork tenderloin with herb topping, finely chop the parsley, finely grate the Gouda and knead with breadcrumbs, cream cheese and egg.

Season with salt and pepper. Heat oil in a pan, sear fillets well on both sides, season with salt and pepper.

Place fillet in a shallow baking dish. Spread herb hood over fillets and bake for about 15 minutes.

Pour vegetable soup into pan and simmer with roast stock until reduced by half. Slice the carrots and sugar snap peas and steam them in a pan with butter for about 8 minutes.

Add the stock after 2 minutes, season with salt, pepper and sugar. Cut fillets into slices, serve with vegetables and roast stock.
