A simple but delicious cake recipe:

Knead flour (1) with pizza dough and elderflower, make more elastic with warm water. Rest until dough doubles in volume.

Grease and flour the baking tray (2).

Preheat oven to 200 °C.

Knead dough, form round loaf on baking sheet, cut diagonally a few times. Brush with cold water, sprinkle with sesame seeds. Let rise for 1 hour.

Cook spleen strips in half of pork fat until tender. Season. Allow leftover pork fat to melt.

Bake loaf for 20 minutes. Separate along the cut in the dough. Fill pieces with ricotta, pecorino and the spleen strips. Drizzle hot fat over them, press together, bring to table with leaf salad.
