For the gooseberry cream, mix the gooseberries with the sugar and 2 tablespoons of water and bring to the boil. Then pass the fruit through a fine sieve and place in a container in the freezer for 2 hours until the mixture is slightly frozen.

Whip the whipped cream until stiff and mix with the chilled gooseberry mixture. If you like, you can also fill the whipped cream and the gooseberry cream in layers into glasses.
