For crispy sage leaves, wash large sage leaves. Place on a cloth and pat dry. Melt the butter in a frying pan. Place the dry sage leaves side by side in the pan and fry over a gentle heat, turning once, until crisp.

Carefully lift out of the pan, drain on paper towels and sprinkle with coarse salt. The crispy sage leaves taste very good with grilled meat, fish or vegetables.
