For the pancakes with zucchini filling, mix all ingredients into a batter. Heat oil in a frying pan, pour some batter into the pan in portions and bake the pancakes for about 2 minutes per side.
For the zucchini filling, peel and dice zucchini. Chop the garlic. Heat some oil and sweat zucchini and garlic all around for about 5 minutes.
Mix cream cheese, zucchini, garlic, salt, pepper and chives until smooth, spread on the pancakes, roll up and serve the pancakes with zucchini filling.
