For the onion soup, chop the onions into rings. Heat the butter and sauté the onions in it. Add soup and spelt, bring to a boil and simmer for 10 to 15 min.

Chop blue cheese coarsely, add and stir until melted.

Stir in the crème fraîche, season with salt and pepper and serve the onion soup sprinkled with chives.
