Instructions:

For the crumble, place all the ingredients in a bowl or on a work surface and knead quickly with your hands to form a shortcrust pastry. Leave to rest in the fridge for 2-3 hours, covered with cling film.

In the meantime, melt the chocolate. Beat the eggs and cane sugar over steam until the mixture turns whitish. Add chocolate, coffee liqueur and vanilla. Whip the cream and fold it in. Pour into a glass and chill in the refrigerator.

Cover a baking tray with baking paper. Preheat the oven to 170 °C. Crumble the dough onto the baking paper and bake for about 12 minutes until crisp.

Season clementines with maple syrup, orange juice and mint.

Arrange chocolate mousse with crumble and clementines and serve.
