Greek Zucchini Salad

Instructions:

Season the zucchini with salt and roast briefly under a strong fire, arrange on a salad plate or platter (a chevale).

Mix well all the salad dressing ingredients and spread evenly over the zucchini (which should still be hot or at least warm). Pull.

If you add the feta cheese in the same way, marinate it in the vinaigrette for at least 30 minutes.

Tip: The flesh of young, small zucchini is much more tender than that of larger ones.
