For the mashed potatoes with artichokes, first peel the potatoes and boil them in salted water until soft.
Trim the artichokes, leaving the artichoke heart. Cook the artichokes in salted water with lemon juice until al dente.
Dice the artichokes and sauté in a little olive oil. Add potatoes and thyme and mash to puree. Refine the mashed potatoes with artichokes with olive oil, salt, pepper and lemon juice and season to taste.
