For the scorpion fish with coriander sauce, blend plucked coriander, garlic, olive oil, lemon juice, anchovy fillets and some sea salt in a blender to a homogeneous sauce. Season with freshly ground sea salt and pepper. Gently score the fish fillets on the skin side with a small, sharp knife or razor blade and sear on this side in hot olive oil for about 2 minutes until the skin is crispy.

Place the fillets, skin side down, in an oil-lined ovenproof dish. Place the Serrano ham on top of the fillets and place in the oven preheated to 170°C for about 5 minutes until the fillets are nice and glazed on the inside. Spread the coriander sauce on the preheated plates and arrange the fish fillets with the skin side up. Season the scorpion fish with coriander sauce with sea salt and pepper.
