For couscous with raisins, put the couscous in a bowl, add enough water to just cover the couscous. Allow to swell for about 15 min.

Blanch almonds with boiling hot water and skin.

In a large saucepan, bring water to a boil.

Stir raisins and cinnamon loosely into couscous. Steam the couscous in a colander over the boiling water. Cover the rim of the pot with aluminum foil to prevent the steam from escaping. Steam the couscous over high heat for about 30 minutes.

Toast the almond kernels in a dry frying pan without fat over medium heat until golden brown.

Remove the aluminum foil from the pot and stir the butter into the couscous. Add the almonds. Loosen the couscous with two forks and steam again for about 5 min.

Pile couscous with raisins on a large plate to form a pyramid and press down. Serve with fresh fruit or compote.
