For the pasta with wild garlic and tuna, first cook the pasta according to the package instructions until al dente.

While the pasta is cooking, peel the shallots and cut into small cubes. Sauté in 2 tablespoons olive oil. Add the tuna, pasta water, ricotta, and chili and bring to a boil once.

Cut the wild garlic into strips and the tomatoes into cubes. Stir into the ricotta sauce together with the pasta and season with salt, pepper and balsamic vinegar.

Arrange the pasta with the wild garlic and tuna in a deep dish.
