Instructions:

For the white wine sauce, make a light roux with flour and butter and pour in the fish stock.

Add the juice of half a lemon and cook slowly for 10 minutes. Then strain.

Remove from heat, thicken with cream and egg yolk, whisked well. Season the white wine sauce as needed.
