Tyrolean Dumpling Duo

Instructions:

Cut ribs, bacon and gray cheese into small pieces. Divide the ribs into two baking bowls. In one large enough bowl put the cheese, in the other the bacon form. Mix eggs with the milk and divide the liquid evenly between the two baking bowls.

Chop the onions and sauté in oil until translucent. Season both masses with salt and pepper, mix in the stewed onions and the chopped parsley. Form small dumplings from the two dumpling masses.

Depending on the consistency, add a little more: Loosen too firm amount with warm salted water, firm too soft amount with a tiny bit of flour. Put dumplings into boiling beef broth and steep at about 90 °C for 10-15 min. For the sauerkraut: heat a little butter, brown flour in it while stirring continuously and add water.

Add whipped cream and spices to this roux. Add the chopped sauerkraut and cook until soft. Season repeatedly at the end. Serve Tyrolean dumpling duo with sauerkraut on plates.
