Instructions:

Cut out the core, remove the skin from all apples and cut horizontally into narrow round slices (so the slices have a hole in the middle). Caramelize 100 g of sugar and pour into a smooth, high give. Turn the give so that it is evenly coated with caramel.

Arrange the apple slices in several layers in a circle in the mold (alternating one row clockwise, one against). Sprinkle a little sugar and orange zest between the rows. Gently press apples together with your hands.

Put the tightly filled give in a fireproof vessel with boiling hot water and cook the “pudding” at 110 °C in a heated stove for 7 (!) hours.

Sorbet:

Grate apples, mix with remaining ingredients. Fill the mixture into an ice cream maker, stir into the sorbet. Cut the “pudding” into triangular pieces, bring each to the table with a scoop of sorbet and a few strips of orange peel.
