The peeled potatoes are grated with a potato grater into a sufficiently large bowl. So that the potatoes do not tarnish, there should be a little bit of water in the baking bowl. Make the semolina in milk and keep it hot. Squeeze the potatoes well with a dish-hangl. Keep the potato water because of the potato starch settled in it! Put the potatoes in a large enough bowl, pour the hot semolina over them and mix it with the cornstarch from the potato water. Instead of semolina you can also use mashed hot boiled potatoes. Dice the ribs and fry them in the butter. Dip your hands in cold water, take a piece of dough, press it on your hand and put some breadcrumbs in the middle. Fold the dough and form dumplings, which are placed in the boiling salted water. Cover and bring to the boil briefly, then simmer with the lid half open for about half an hour. In Munich, these dumplings are served with roast goose, roast duck, roast mutton or roast pork.
