Rinse nettle leaves, cook in water (boiling) for 5 minutes, drain in a sieve, chop or pass through a meat grinder. Brown butter with flour, add milk and cook for 5 minutes. Add salt, pepper and nettles, let it boil once, serve with boiled potatoes and slices of sausage fried in butter. In spring, when the beetroots were planted, the same recipe was used to cook “Deckworzgemois” from the young beetroot leaves.
Spinach and melde were also prepared according to this recipe.
