For the fruity curry pot, first peel and finely chop the onions. Peel the apples, remove the core and quarter the flesh. Wash the coriander, shake dry and pluck off the leaves. Finely chop half of it.

Cook the rice according to the package instructions.

Sauté the onions in a little oil. Add the apple slices. Stir in curry and coriander, pour in vegetable soup and coconut milk. Season to taste with salt, pepper and sugar. If the sauce is still too liquid, thicken with starch if necessary.

Cut the pork into medallions or cubes, salt and pepper. Fry in a little oil. Add to the sauce and serve the fruity curry pot immediately with the rice.
