For the curd almond cake, separate the eggs and beat the egg whites until stiff. Beat yolks, soft butter and powdered sugar until creamy.

Grate lemon peel and squeeze lemon. Mix in vanilla sugar, lemon zest, lemon juice, sour cream and curd.

Add flour and baking powder and mix together. Gently fold in the snow.

Pour the dough into a greased and floured springform pan (24cm) and sprinkle with flaked almonds. Bake in the oven at 180 °C top/bottom heat for about 40 minutes.

Serve the quark almond cake sprinkled with powdered sugar as desired.
