For the crab butter, mix the crabs with 25 gr. Butter in a mortar and pestle very fine.

Then pass through a hair sieve. Mix another 50 gr. of butter very thoroughly with it. Form into a stick and wrap in aluminum foil. Leave to set in the refrigerator and cut into slices.

Serve the crab butter cold.
