Instructions:

For the minestrone, peel the tomatoes and cut into bite-sized pieces. Peel and chop the celery bulb. Cut the celery into small slices. Halve the bell bell pepper, remove the white ribs and seeds, wash and dice. Peel or wash the rest of the vegetables and dice them as well. Peel the garlic and crush it with a little salt.

Heat the oil in a large saucepan. Cut the bacon into small cubes and fry in oil. Add garlic and chopped vegetables and stir-fry everything together. Pour in soup. Cook for about 10 minutes with the lid on the stove.

Sprinkle in the long grain rice, stir through and cook on the stove for another 15 min. Now add the frozen peas and simmer in the soup for another 5 minutes.

Sprinkle the minestrone with Parmesan cheese and serve hot.
