Instructions:

For the spinach leaves, saute onions and garlic in hot butter, add drained spinach and saute with lid closed until it collapses. Season, stir through and saute another 5 minutes, sprinkle with Parmesan.

Fry 8 fried eggs in hot butter and arrange on top of spinach.
